Dates (Khajur) ki Chutney


Dates (Khajur) ki Chutney
Ingredients
Khajur/dates                             50gm
Raisins seedless                        15gm
Lemon juice                              2 tsp
water                                        1 cup
salt                                           1/2 tsp or per taste
brown sugar                             1tsp
Cumin powder                          1tsp
black paper powder                 1tsp
tamarind (Imli)              2tsp
Preparation

Remove dates seeds. Mix all the ingredients in a blender and mix well. Filter and after filtering cook the filtered mixture for 3 minutes. Serve the strained chutney patties and barbecue

Almond (Badam) Raita


Almond (Badam) Raita

Ingredients
Yogurt                                      1 Cup
Almond                                    1 cup
Green chilies                             5-6
Black pepper                            1/2 tsp
Salt                                          to taste
Fresh coriander                        1/2 bunch
Water                                       as per need
Mint leaves or fresh coriander for garnishing

Cooking

In food processor grind almond and curd and water, green coriander, green chilli, salt and black pepper garnish with sliced almonds and coriander and serve.

Cucumber (Khera) Raita


Cucumber (Khera) Raita

Ingredients
Dahi/Yogurt                                          1 cup
Cucumber copped or mashed               1
Salt                                                      1 tbsp
Black Pepper                                       1tbsp

Method

Mix yogurt well then add cucumber, salt, black pepper serve it with rice.

Onion Raita


Onion Raita

Ingredients
Dahi/Yogurt                              1 cup
Tomato, chopped                     1
Onion, chopped                       1
Salt                                          1/2 tbsp
Black Pepper                           1tbsp

Method

Mix yogurt well then add cucumber, onion, salt, black pepper cumin powder and serve it

Mixed Raita


Mixed Raita

Ingredients
Dahi/Yogurt                              1 cup
Tomato, chopped                     1
Carrot, chopped                       1
Cucumber chopped                  1
Onion, chopped                       1
Cumin powder              a pinch
Salt                                          1/2 tbsp
Black Pepper                           1tbsp
Green chilli                               1

Method

Mix yogurt well then add cucumber, onion, salt, green chilli, black pepper in it and Serve it

Bengan ka Raita or Bengan ka bhahrta


Bengan ka Raita or Bengan ka bhahrta

Ingredients
Dahi/Yogurt                              1 cup
Cumin powder (zeera) a pinch
Salt                                          1/2 tbsp
Black Pepper                           1tbsp
Bengan or brinjal                      1
Green chilli paste                      1 tbsp
Onion (mashed)                        1
Oil                                            for greasing bengan
Mint leaves or fresh coriander for garnishing

Method

Grease brinjal with oil and cut  2-3 holes with a knife. Roast on a stove directly until cooked well. When it cools, remove the outer layer and mash it then strike curd and Mix it with bengan along with green chilli paste, mashed onion,salt and cumin powder. Garnish with mint leaves or fresh coriander
