Mango Pickle
(Aam ka Achar ) Recipe
Ingredients:
Mangos 2 kg
Green Chillies (cut into slices) 250grams
Fenugreek 8-10 teaspoons
Salt (Namak) 500 grams
Turmeric (Haldi) 200 grams
Red chili pepper (Lal Mirch) 8 teaspoons
Vinegar (Sirka) 11/2cup
Mustard seeds (Rai/Sarson) 10 tbsp
Asafetida 4 tbsp
Najila kalvangi 4 tbsp
Mustard Oil (Sarson Ka Tel) 6 cup or 1 1/2 kg
Cooking
Cut each mango into 6 pieces. Mix salt and turmeric with
mangos, keep in the sun for 7 days in the jar and shake it daily and remove
water from them. Heat oil fry asafetida, fenugreek and mustard seeds and
kalvangi in it then add Green chilies, red chili powder and mangos. Add vinegar
or sirka and Keep it in the sun for 4-5 days
Mango pickle is ready can be preserved for 1 1/2
years
